Fruit Pizza

Ingredients
1 tube of sugar cookie dough (or make your own of course!)
1 pkg of cream cheese
1/4 cup brown sugar
3 T. Vanilla
Fresh fruit (strawberries, bananas, blueberries, kiwis...any kind you like!!!)

Time:  approximately 45 minutes from start to finish
This picture is totally not our fruit pizza!  Ours would look ghetto.  I just ripped this off the internet because I just realized I had forgotten this recipe today when I was about to go ahead and publish our cookbook!  What a tragedy it would've been to forget this gem.  I looooooove this dessert!  Sometimes when we make it, we make individual large cookies rather than one large pizza.  The kids like that. 

So all you need to do is take your cookie dough and spread and flatten it out on a pizza pan.  Do it evenly.  Preheat the oven to 350 degrees and bake your giant sugar cookie for about 15-20 minutes.  
While that is baking, you can make your cream cheese mixture.  Soften the cream cheese if need be in the microwave for a second or two.  Then with a hand mixer, mix up the cream cheese, brown sugar, and vanilla together.  
Before you can spread that onto your cookie, you'll need to let the cookie cool first.  So while it cools, wash and cut up all your fruit that you're gonna use.
When the cookie is cooled, spread on your cream cheese mixture.
Then place your fruit on top.  If you're a perfectionist, as I am most certainly am not, you can place your fruit on like the picture above.  Gorgeous.  Even more delicious.
