Veggie Pie

This meal is so easy that even our toddlers can do most of it themselves!  
Charity and Sam are our cooks today.  They each made one veggie pie tonight because our family of 10 usually will eat two of these in one sitting.  
So here's what you need for just one pie, if you want to make two pies, just double as you see here:
1-  One box of pie dough.  (We accidentally had 4 boxes in the photo here because after making this, we made some apple pie, and had all our dough out here.) 
2-   2 bags of Steam Fresh veggies.  We like the kind that has corn, peas, carrots and baby asparagus in it.  3-  About 1 cup of shredded cheddar cheese.  
4-  About 1/2 cup of chopped onion, (we use the frozen kind.)  
5-  And some oregano for seasoning.

Time:  approximately 70 minutes with prep and cook time combined

 First you'll throw your steam fresh veggies in the microwave.
 We have two microwaves and we just threw in two bags into each microwave here together.  Then you'll cook it for about 5 minutes.  You don't have to totally cook it because it will bake in the oven as well.  
 While the veggies are cooking, you will take one of your dough rolls and unroll it into a pie pan or tin.
 This is fun for little kids.
 Pat the dough down to form to the pan.
 Sam needs a bit of help to get his centered and patted right :)  
He's not even two yet, so what do you expect?
 Then you're gonna get your cheddar cheese.  
You really could use any kind you like, but this is what we use.
 While Charity is getting the cheese opened, Sam is busy emptying one of his bag of veggies into his pie pan.
 When all the veggies are poured in your pan, then pour on your cheese.
Maybe a cup or two?  We just pour on however much looks good to us.  
 Once the cheese is on, then you're gonna pour on your chopped onions.
You could use fresh onions of course, we just like the tear free variety.

 Last thing you'll add, is some oregano.  Just shake a bit on there-- whatever looks like a good amount to you.
 Sam is getting into his shaking!
 Then you will unroll your other dough and place it on top.

 The little kids needed a bit of help with this last step.   Pinch the two rolls of dough together.
 He's patting it and pricking it and marking it with a "B".
When it's all made, you will put it in the oven, preheated to 350 degrees, and bake for about an hour.
