Mini-Pizzas & Calzones

These two recipes are so similar that we are combining them in one post.  

Ingredients for mini pizzas
Rhodes rolls (we used the whole wheat kind.  They're yummy!)  
Use 1 roll for each pizza you want to make.
Pasta sauce, whatever kind you like!
Italian shredded cheese
Other toppings could be pepperoni, olives, tomatoes, onions, whatever!

Time:  Dough thawing and rise time (abt 2 hrs.)  
Then another 35 minutes for prep and cook time combined.

 You'll start with your frozen rolls dough.  Let it thaw for a couple of hours.
 After spraying a pan with cooking spray, then spread out your roll dough in little pizza doughs.
 Put them in the oven, preheated at 350 for about 10 minutes.
 When they come out, spread some pasta sauce on top of each of them.
 Then sprinkle some Italian blend shredded cheese on top of each one.
 Then you can put more toppings on top.  Today we made a couple of pepperoni ones for our non-vegetarian boys.  We usually like olives on it too, but Jonah stole the olive can and ate it as a snack today.  

Put them back in the oven for about 15 minutes or so.

*side note, I use to make mini-pizzas using bagels in the old days.  They're even easier to make, but not as yummy to us, and probably not as healthy.

Ingredients for individual Calzones
We used the same Rhodes wheat rolls dough.  You'll need 4 of them for each calzone.
Pasta sauce
Shredded Italian Cheese
Desired toppings like: tomatoes, pepperonis, onions, olives, whatever.

Time:  After letting the dough thaw for a couple of hours,
 it takes about another 40 minutes to make these.
 On a greased pan, you'll take two rolls and after smashing them together, 
flatten them out on the pan.
 Then you'll spread on your pasta sauce.
 Sprinkle on your cheese.
 Add any other toppings you'd like.  We did a couple of pepperonis for those meat eating boys.
 Take two more rolls and smash them together, then flatten them on top of each calzone.
 Put them in the oven, preheated at 350 degrees for about 35 minutes.
Here is a sample of two of our mini-pizzas and two of our calzones.  We put a pepperoni on top of the calzone with pepperoni so we don't have to cut anything open to find out what's in it.
