Ingredients
1-2 bags of tortilla chips depending on how much you're making
(our family of 10 could use 2)
1-2 bags of shredded cheddar cheese or a Mexican variety type
1 bunch of green onions
2 cans of Mexicorn or Southwestern style corn
(you could use instead 1 can each of corn, kidney beans, and black beans)
optional: sliced olives
Time: approximately 15 minutes prep and cook time combined

This meal is SUPER easy and the kids LOVE it!!!
Step 1: Just pour some tortilla chips on a pan. Higher standards would call for better chips. We love the the Tostitos Multigrain ones.
Step 2: Pour some shredded cheese on top. Today we used shredded Cheddar Jack mix. But you can use whatever kind you like.
Step 3: Pour your veggies and beans on top. Easiest option are these Steam Crisp Southwestern Style cans. They have corn, black beans, and bell peppers in them. Easy peasy. But we have also used individual cans of corn, kidney beans, and black beans. Just as yummy.
Step 4: Spread it all around.
Step 4: This is a first for us. We thought it might be yummy to add some sliced olives. Some of the kids loved it, others didn't. Totally optional.
Step 5: This is also optional, but we all like green onions on them. First Hana sliced one end up. (Rather large slices.) If you were picky you could insist on your kid slicing it thinner. Or do it yourself.
Then she sliced the other end of the green onions.
Pouring them all on top.
Step 6: All ready to bake! Just throw it in the oven at 400 degrees for about 10 minutes.
She loved them!
