Ingredients
1 bag of coleslaw
1 bunch of green onions
1 bag of sliced almonds
1/2 bag of roasted sunflower nuts
2 pkgs ramen noodles
dressing ingredients:
4 oz. olive oil
4 oz. rice vinegar
4 T. sugar
1/2 T. each of: salt, pepper, garlic powder
Time: approximately 40 minutes for prep and set time total

This meal is another favorite of our family's. Especially Eden, who is our host cook today.
She is making a double recipe here, that usually feeds all 10 of us and leaves us with a bit of leftovers. I will give the amounts for enough for about 5-6 people and our double recipe in parentheses.
Step 1: Dump one bag of coleslaw in a large bowl. (We used 2 bags.)
Step 2: Slice up some green onions. We do both ends. Put as much in as you like. (We usually put a few stocks in, but we only had one on hand today.)
Step 2b: Dump all the onions in the bowl.
Step 3: Dump some sliced almonds in. We like these Fresh Gourmet Honey Roasted Sliced Almonds. Use as much as you like. Typically a single batch would use one bag. (We used two full bags today.)
Step 4: Dump in some Sunflower nuts. (We used this entire bag of honey roasted.) Use as much as you like in your batch. Typically a single batch would be half a bag.
Step 5: Crush up some ramen noodles. We used 4 bags. If you're doing a single recipe, maybe just use two bags. Crush them up while they're still in the bag is easiest. Baby food jars are good for crushing too.
Step 5b: Pour the ramen noodles in.
Step 5c: Remove the seasoning packets.
Now time to make the dressing! Here is all the ingredients you need for a single recipe that serves 5-6 people and one bag of coleslaw:
4oz. Olive Oil, 4 oz. Rice Vinegar, .5 tsp. Salt, .5 tsp. Pepper, .5 tsp. Garlic Powder and 4 T. Sugar.
Step 6: Just dump all those ingredients together in a separate bowl and mix up with a fork.
6b: Pour it on top of the salad.
6c: Mix it all up super well with a large serving spoon.
Finally, shove that puppy in the fridge to chill for about 30 minutes.
Now with the amount of nuts we put in this salad, it is a nice little combination of the veggie and protein groups; plus you've got your healthy fat with the Olive oil too. But before we were vegetarian, we would cut up chicken, sometimes the fried kind, and throw that in. Or you could used canned. Any kind you like really will work.
